Pizza: Easy and wonderful!


2 C King Arthur AP flour
3/4 t salt
3/4 t Yeast (quick)
3/4 Water + 1 to 2T
1T Olive Oil

Mix all together let sit 5 minutes.  
Turn 5 or 6 times every 5 Minutes... repeat 4 times.
Refrigerate overnight.  over two nights prefferred

take out around 2PM and let rise.  For deep dish: Add to pan around 5 (2 T Oil)  450 for 18 minutes.
OR
use Pizza Screen:   450 12 minutes.  7 minutes bottom rack, 5 minutes middle.

Cheese:  8 oz shredded mozz.  4 oz shredded provolone.

Good Sausage Pizza:  (in this order)
tub alouette garlic and herb
red onions (thinly sliced and soaked in water)
Chopped Tomatos
Sausage (Italian taken out of casings and cooked.  Leave in good sized chunks)
Allepo Pepper
Chopped Fresh Spinach
Cheese (Mozz + prov)
S,P & GP
Spices (Oregano, basil, italian if desired)
