Banoffee Pie


Vanilla wafer crust
2 cans(14oz each) sweetened condensed milk
3 bananas
Whipped cream topping
Grated chocolate for garnish

CRUST
2 C vanilla wafer crumbs
2 T sugar
5 T melted butter

Combine all ingredients in a medium bowl and mix well. Firmly press the crumb mixture evenly into a 9-inch pie plate. Bake at 350 for about 8 minutes. Cool.

WHIPPED CREAM TOPPING
1 1/2 C heavy whipping cream
1/3 C confectioners' sugar
1 t vanilla

FILLING

1. Place the UNopened cans of condensed milk (don't open cans) in a saucepan and cover with water.
2 Bring the water to boil then reduce slightly and let the cans boil covered for 1 1/2 to 3 hours (if you are patient enough to wait for 3 hours it is better)
3. IMPORTANT - Don't ever let the saucepan boil dry.
4. Keep checking on it and adding more water as necessary.
5. Remove the cans and wait a few minutes before opening them very carefully in the sink.
6. Stir the toffee to remove any lumps. Let cool a bit.
7. Spread one can evenly inside crust. Slice bananas and layer on top of toffee. Pour remaining toffee over bananas spreading evenly. Chill while making topping. Whip the cream with confectioners' sugar and vanilla and spread on top of toffee filling. Garnish with shaved or grated chocolate. Chill.
