Hummus


8 oz chickpeas
2 cloves garlic crushed
6 T lemon juice
4 T tahini
5 T olive oil + extra to serve
1 t cumin
salt and pepper
paprika to garnish
pita and black olives to serve

Drain peas reserving liquid.
Process to smooth paste adding small amount of liquid if necessary.
Mix garlic lemon juice & tahini together and add to processor. process till smooth. with machine running gradually add 3-5 T olive oil through feeder.
Add cumin. season w/ salt & pepper.
Cover and chill.
(for a stronger nutty flavor use smooth peanut butter instead of tahini. (it's delicious as well)
