1 - 1.25 lbs Catfish
1/2 G Water
1/3 C Kosher Salt
2/3 C Brown Sugar
Dissolve and then add the fish. Let soak covered in the refrigerator about 12+ hours.
Take fish out and let dry for about an hour on racks for the smoker.
PH smoker ~180F -- smoke fish about 2 hours.
Chop all the following together:
1/3 cup green onions
1/3 cup horseradish
Fish
Then mix with:
1/4 cup sour cream
1/4 cup mayonnaise
1/4 cup fresh lemon juice (or Lime)
