This recipe makes a lot. You might need additional baking dish. Cut recipe in half if there are just 4 eating.
1.5 lbs ground beef
2 large 28oz cans of enchilada sauce green or red
1 large 240z jar of your favorite salsa
1 can sliced black olives
16oz sour cream
1 onion diced
2 lbs mexican blend cheese (yellow and white mixed) shredded
1 lb mexican blend or taco cheese shredded
2 bags of tortilla chips
Brown ground beef with diced onions. Smash up tortillas chips and pour into a very large mixing bowl or big pot. Pour in salsa enchilada sauce 2 lbs bag of cheese meat and onions and mix well. Add a little milk if needed. Spoon into greased casserole dish and top with taco cheese. Bake 350 for one hour. Top off servings with sour cream and olive slices.
