Cashew Toffee Cookies 😋


1/4 C old fashioned oats

1 1/8 C all purpose flour

1/2 t baking powder

1/2 t baking soda

1/4 t salt

1 stick unsalted butter, room temperature

1/2 C firmly  packed brown sugar

1/2 C granulated sugar

1 egg

1/2 t vanilla

1/4 C Heath toffee bits

1/2 C chopped cashews

3/4 C chocolate chips ( I used milk chocolate)

Mix dry ingredients together in small bowl and set aside (oats, flour, baking powder, baking soda and salt).  Using electric mixer, beat butter and both sugars until fluffy.  Beat in egg and vanilla.  Slowly add dry ingredients and mix between additions until  blended.  By hand, stir in toffee, cashews and chocolate chips.  Place in small dollops on an ungreased cookie sheet and bake in a 325 degree oven (pre-heated) for 15-18 minutes or until golden brown. I took mine out at 15 minutes and they were perfect.  Let cool for 2 minutes before moving to wire rack.  So good!!
