2 Lb Diced boneless Chicken Breast
1/4 C Butter
2 Coarsely Grated Carrots
2 Coarsely Grated Celery Stalks
4 Chopped Green Onions
1/4 C Flour
2 C Chicken Broth
2 C Heavy Cream
3 C Cooked Rice
1 1/2 C Grated Swiss Cheese
1 1/2 C Grated Medium Cheddar
Preheat 450
Saute Chicken Over Medium Heat in Butter
Stir in Vegetables (2-3 minutes)
Add Flour Chicken Broth and Cream
Simmer until Thick
Spread Rice in a Greased 9 x 13
Pour Chicken Over Rice
Spread Cheese On top
Bake 6-8 minutes
