Coconut Crisps


2 C all purpose flour

3/4 t baking powder

1/4 t salt

3/4 c softened butter

1 C sugar

1 lg. egg

1 t vanilla

1 1/2 C shredded sweetened coconut

 

Preheat oven to 375.  Combine flour baking powder and salt in mixing bowl.  Beat butter and sugar at med. speed until light and fluffy.  Beat in egg and vanilla.  With mixer at low speed beat in dry ingredients just until combined.  Stir in coconut.

Drop by level tablespoonfuls onto ungreased cookie sheets.  With bottom of glass dipped in flour flatten each cookie to 1/4 thickness then press with back of fork to form ridges.  Bake 10 -12 minutes until edges are golden.  Transfer to racks to cool.  Makes about 3 dozen.
