Tui's Chili Enchiladas


Corn tortillas
Shredded cheese
Shredded lettuce
Diced onions (optional topper)

Reheat your favorite leftover chili.
Fry the corn tortillas in hot oil until almost crisp but not(3-5 seconds each side). Drain on paper towels to absorb oil.
To assemble:
1. Place 1 tortilla on plate.
2. Spoon chili on tortilla.
3. Sprinkle with cheese.
4. Stack another tortilla on top.
5. Spoon chili on tortilla.
6. Sprinkle with cheese.
Stop there or do another layer.
7. Top with shredded lettuce.

Serve with salsa if desired.
