Vegetable Soup


INGREDIENTS

  • 1 Tbs olive oil
  • 8 oz carrots chopped
  • ½ onion chopped
  • 3 cloves garlic minced
  • 1 tsp garlic salt
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 2 cups tomato sauce
  • 2 cups water
  • 15 oz canned peas drained
  • 15 oz canned corn drained
  • 15 oz canned black beans drained
  • 12 oz fresh or frozen okra


DIRECTIONS

  1. Heat olive oil in a large pot on medium. Add the onions carrots garlic and all the spices.
  2. Mix well and cook for about 3 minutes until fragrant
  3. Add the tomato sauce water all the drained vegetables and the okra. Cover and heat for about 15 minutes until boiling
  4. Uncover and lower the heat. Simmer for about 10 more minutes
  5. Serve and enjoy!
