Vegetable Soup
INGREDIENTS
- 1 Tbs olive oil
- 8 oz carrots chopped
- ½ onion chopped
- 3 cloves garlic minced
- 1 tsp garlic salt
- 1 tsp garlic powder
- ½ tsp black pepper
- 2 cups tomato sauce
- 2 cups water
- 15 oz canned peas drained
- 15 oz canned corn drained
- 15 oz canned black beans drained
- 12 oz fresh or frozen okra
DIRECTIONS
- Heat olive oil in a large pot on medium. Add the onions carrots garlic and all the spices.
- Mix well and cook for about 3 minutes until fragrant
- Add the tomato sauce water all the drained vegetables and the okra. Cover and heat for about 15 minutes until boiling
- Uncover and lower the heat. Simmer for about 10 more minutes
- Serve and enjoy!
