Black Eyed Pea Gumbo


1 Med Onion chopped
1 Med Green Bell Pepper chopped
5 Celery Stalks chopped
2 C Chicken Broth
1 C Rice (brown rice optional)
4 15oz Cans Black Eyed Peas with Liquid
1 10oz Can Green Chilies chopped
1 14oz Can Diced Tomatoes
2 Cloves Garlic crushed
1 t Olive Oil

Heat olive oil in large saucepan over medium. Cook onion pepper and celery until tender. Pour in chicken broth. Mix in rice black eyed peas with liquid green chilies diced tomatoes and garlic. Bring to boil. Reduce to low and simmer 45 minutes (until rice is tender).

Add water if/when soup becomes too thick.
