2 C dry lentile(10oz)
4 C water
1 1/2 C chopped carrots
1 1/2 C chopped onions
1 C chopped celery
1 clove garlic minced
1-3 t curry powder
1 t grated fresh gingerroot or 1/4 t ground ginger
1 t salt
1 1/2 C plain lowfat yogurt
1 med. tomato chopped
1 T snipped fresh cilantro or parsley
Rinse lentils and drain. In dutch oven combine lentils water carrots onions celery garlic curry powder ginger and salt. Or another way...saute vegetables in olive oil then add rest of ingredients. Bring to boiling; reduce heat. Cover and simmer for 30 min. or until the lentils are tender.
Stir together yogurt tomato and cilantro. Serve with lentils. 6 servings.
