2 20 oz cans pineapple chunks (in juice NOT syrup) drained (reserve 6T juice)
1-1 1/3 C sugar
5 T flour
1 C shredded cheddar cheese
1/4 C melted butter
1 sleeve Ritz crackers crushed
Preheat over to 350 degrees.
In a medium sized bowl combine sugar flour and reserved pineapple juice. Add pineapple chunks and toss well to combine. Spoon pineapple mixture into buttered medium casserole dish and top with cheese.
Combine crushed crackers and melted butter. Spread crackers evenly on top of pineapple mixture.
Bake at 350 for 30 minutes or until bubbly.
