Lemony Salmon & Potatoes

Ingredients

  • 2 pounds salmon fillet
  • 2 pounds golden or russet potatoes, in wedges
  • finely chopped fresh dill

The Ladolemono Dressing:

  • 1/2 cup olive oil, or less
  • 1/2 cup fresh lemon juice
  • 6 garlic cloves, grated
  • 2 teaspoons spicy mustard
  • 2 teaspoons dried oregano
 

Instructions

  1. Preheat the oven to 425 °F, 220 °C.
  2. Combine all of the dressing ingredients in a bowl and whisk together.
  3. Place the potato wedges in a sheet pan. Pour half of the dressing over them and season with salt and black pepper.
  4. Roast the potatoes on the center rack for 25 minutes.
  5. Make room for the salmon and add it to the pan. Pour the remaining dressing over the salmon and season with salt and pepper.
  6. Roast for 12-15 minutes until cooked through.
  7. Garnish with dill and serve. Kali Orexi!
