Ingredients
- 2 pounds salmon fillet
- 2 pounds golden or russet potatoes, in wedges
- finely chopped fresh dill
The Ladolemono Dressing:
- 1/2 cup olive oil, or less
- 1/2 cup fresh lemon juice
- 6 garlic cloves, grated
- 2 teaspoons spicy mustard
- 2 teaspoons dried oregano
Instructions
- Preheat the oven to 425 °F, 220 °C.
- Combine all of the dressing ingredients in a bowl and whisk together.
- Place the potato wedges in a sheet pan. Pour half of the dressing over them and season with salt and black pepper.
- Roast the potatoes on the center rack for 25 minutes.
- Make room for the salmon and add it to the pan. Pour the remaining dressing over the salmon and season with salt and pepper.
- Roast for 12-15 minutes until cooked through.
