(Fish House Key Largo)

1 C Chopped Sweet Onions
1 3.5oz jar capers drained and rinsed
2/3 C Shallots (4 to 5)
3 C Chopped Fresh Tomatoes with juice (about 5 medium or 8 plum)
1/4 C Snipped fresh basil
S&P
1/3 C fresh lemon juice
1 C Olive Oil
2 1/2 Lb Snapper or Grouper

1 Hours ahead: place onions capers shallots tomatoes basil 1 1/2 t salt 3/4 t pepper lemon juice oil in medium non-metal bowl. Stir to combine. Cover bowl & refrigerate until needed.

Preheat broiler. Place race 4-6 below. Coat a high baking sheet with spray/oil. Place fish on single layer. Season fillets with S&P. Spoon mixture atop fillets dividing evenly (1/4 to 1/2 cup per fillet). Though lots is better :)

Broil 5-10 minutes. Don't over cook. Spoon remaining over top.
